Soul Warming Yellow Split Pea & Spinach Soup

There’s nothing like a hot bowl of comfort to bring you back to center. This soup combines that natural earthiness of healthy greens with our dressing’s trademark blend of sweet, zest and spice. The rich combination will leave you wanting more, while the reheated flavors will help you quickly eliminate your leftovers.

INGREDIENTS:

  • 2 cups of yellow split peas

  • 8 cups of water

  • 10 oz. frozen spinach

  • 5 tbsp Nal’s Kitchen Honey Ginger Dressing

  • 13 Thai chili peppers 

  • 1 tbsp. of oil

  • 2 tsp. or to taste coarse salt

DIRECTIONS:

  1. Rinse the yellow split peas in fresh water before cooking.

  2. Place all ingredients in a pressure cooker. After 2 whistles, turn off the heat and open the pressure cooker when safe. If the yellow split peas are not cooked to the desired texture, continue to cook on the stove until finished. Stir well to mix all the ingredients.

  3. Add an additional 3 tbsp. of Honey Ginger Dressing, if needed and add an extra ¼ tsp of salt to taste, if needed. Stir before serving.

Tip: This dish can also be prepared using a saucepan/slow cooker/instant pot.
